Tiramisu Cupcakes with Mascarpone Frosting… a Cupcake for all seasons!
Stir the hot coffee with 30 g sugar and 1 tbsp rum. Cool it down.
Beat the eggs with the rest of the sugar until they get white.
Mix the flour and the salt and stir them with the beaten eggs until it’s an even mixture.
Divide the dough in a muffin pan, in which paper forms have been put for the muffins.
Bake for about 15 min in preheat oven at 180 degrees with fan.
Grease them with part of the coffee mixture.
Beat the Mascarpone with the powdered sugar and the rest of the coffee. Put the mixture into a posh.
Cover the cupcakes with the mascarpone cream and sprinkle them with some chocolate.
